Antipasto is an Italian word that means "before the meal." It is a selection of hors d'oeuvres such as salami, marinated mushrooms, tuna, or anchovies.

- 2 cups tomato sauce
- 2 cups water
- 4 teaspoons dried onions, minced
- 2 bouillon cubes
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1 teaspoon chili powder

- 1 pound ground beef or shredded beef
- 1 medium onion, chopped
- 2 teaspoons chili powder
- 1 teaspoon salt
- 2 tablespoons fat
- 1/2 pound American or cheddar cheese, grated
- 12 corn tortillas
- 1 medium onion, chopped
- 2 cups enchilada sauce

- Mix sauce ingredients together, simmer for 5 minutes.
- Cook beef in fat, add onion, chili powder, and salt.
- Soften tortillas by dipping one at a time in hot enchilada sauce.
- Spoon on filling, roll, then arrange in shallow baking dish, seam side down.
- Pour on remaining enchilada sauce, sprinkle with onion and cheese.
- Heat at 350° for 15 or 20 minutes or until cheese melts.
