          • 8 cups cooked rice
          • 1 pound cooked eye of round beef, sliced 1/2‑inch thick
          • 2 tablespoons olive oil
          • 1 cup yellow onion, thinly sliced
          • 1 cup green bell pepper, thinly sliced
          • 1/2 cup celery, thinly sliced
          • 2 cups Roma tomatoes, chopped
          • 1/2 cup chicken stock
          • 1/2 teaspoon hot-pepper sauce

          1. Cook rice according to package directions; set aside and keep warm.
          2. Cut beef into 1/2‑inch cubes.
          3. Heat olive oil in a large non-stick skillet over medium-high heat. Saute onion, peppers, and celery for 3 minutes.
          4. Add beef, tomatoes, chicken stock, and pepper sauce. Reduce heat to medium-low and simmer for 10 minutes.
          5. Serve over rice.
