Don't add sugar to stewed fruits until they have boiled for 10 minutes. They need less sugar then.

- 8 cups cooked rice
- 1 pound cooked eye of round beef, sliced 1/2‑inch thick
- 2 tablespoons olive oil
- 1 cup yellow onion, thinly sliced
- 1 cup green bell pepper, thinly sliced

- 1/2 cup celery, thinly sliced
- 2 cups Roma tomatoes, chopped
- 1/2 cup chicken stock
- 1/2 teaspoon hot-pepper sauce

- Cook rice according to package directions; set aside and keep warm.
- Cut beef into 1/2‑inch cubes.
- Heat olive oil in a large non-stick skillet over medium-high heat. Saute onion, peppers, and celery for 3 minutes.
- Add beef, tomatoes, chicken stock, and pepper sauce. Reduce heat to medium-low and simmer for 10 minutes.
- Serve over rice.
