          To ripen fruits place them in a small, clean paper bag. Loosely close the bag and store it at room temperature. Check fruit daily and remove any that yields to gentle pressure.

          • 4 pounds brisket
          • salt and pepper
          • 1/4 cup Worcestershire sauce
          • 1/2 teaspoon sage
          • 1/2 cup sugar
          • 1 1/2 teaspoons celery salt
          • 1/2 teaspoon Tabasco
          • 1 1/2 cups catsup

          [edit] Directions

          Salt and pepper brisket. Combine remaining ingredients in small pan. Heat just until sugar melts. Pour 1/3 of the sauce in bottom of roasting pan. Place brisket on sauce. Pour 1/3 of sauce on top of brisket. Cover and cook in 275° oven for 4 1/2 hours.
