          Makes 12 servings

          [edit] Ingredients

          • 1 package spice cake mix for 2 layer cake
          • 1/2 cup chopped peanuts (salted or unsalted)
          • 1 3/4 cups confectioner's sugar, divided
          • 1/3 cup peanut butter
          • 1 cup heavy cream
          • peanuts for garnish

          [edit] Directions

          1. Early in the day, prepare cake mix as directed.
          2. Fold 1/2 cup chopped peanuts into prepared mix.
          3. Bake, according to directions on package for two 9‑inch round cake pans, which you have greased and floured.
          4. When cool, cut in half horizontally.
          5. In a medium bowl, mix 1 1/2 cups confectioner's sugar and 2 tablespoons water until smooth; set aside.
          6. In a small bowl, mix peanut butter, 1/4 cup cream and 1/4 cup confectioner's sugar.
          7. In another bowl, with mixer at medium speed, beat remaining 3/4 cup cream until soft peaks form.
          8. With a rubber spatula, gently fold peanut butter mixture into whipped cream until well mixed.
          9. Assemble cake as follows: Place one cake half on serving plate, spread with 1/3 of the whipped cream mixture. Repeat layering, ending with the cake's top half.
          10. Spread top layer with confectioner's sugar mix, letting excess drip down sides. Garnish top with peanuts.
