When going on a picnic, keep sandwiches from becoming soggy by packing lettuce and condiments in separate containers. Add them to sandwiches just before serving.

[edit] Ingredients
- 1 dozen eggs
- 4 ounces cheddar cheese, shredded
- 1 1/2 cups cooked sausage, browned and drained (you can substitute ham, bacon, or Canadian bacon)
|
- 1 can cream of mushroom soup
- 1/2 cup green onions, sliced
- 1/2 cup Half & Half
- 2 tablespoons margarine
|
[edit] Directions
- Preheat oven to 250° and grease a 2-quart casserole dish.
- In a large skillet, melt margarine and saute onions until crisp-tender.
- In large bowl, beat eggs; stir in Half & Half, and sausage.
- Pour egg mixture into skillet with onions; mix well.
- Cook over medium heat. As mixture begins to set, gently lift cooked portions with spatula so that the uncooked portions can flow to bottom, but avoid constant stirring.
- Cook just until eggs are thickened throughout.
- Spoon cooked egg mixture into prepared casserole dish.
- Pour soup evenly over top. Bake at 250° for 30 minutes.
- Sprinkle with cheddar cheese and bake 10 to 15 minutes longer.
