- 1 pound elbow macaroni
- 2 tablespoons olive oil
- 8 ounces bologna
- 1/2 stick butter
- 1/4 cup all purpose flour
- 2 1/2 cups heavy cream
- 1 teaspoon granulated onion

- 1/2 teaspoon granulated garlic
- 1 teaspoon kosher salt
- 1/4 teaspoon pepper
- 8 ounces cheddar cheese, shredded
- 8 ounces American cheese, sliced
- 1/2 cup green onion, sliced
- 1 cup plain breadcrumbs

- Preheat oven to 350°.
- Boil macaroni according to package directions; drain and rinse under cool water until completely cool.
- Coat pasta with olive oil, and set aside.
- Cut bologna into 1/4‑inch chunks or smaller, and set aside.
- In a tall saucepan, melt butter over medium high heat. Whisk in flour, and cook 1 minute.
- Add cream, onion, garlic, salt and pepper. Keep whisking and cook until cheese is completely melted.
- Add cheese sauce and bologna to cooked macaroni.
- Spray a 10‑inch by 12 1/2‑inch by 2 1/2‑inch roasting pan with a nonstick spray.
- Place macaroni mixture in the pan, and top with green onions and bread crumbs.
- Bake at 350° for 30 minutes; raise the temperature to 375°, and cook an additional 10 minutes to brown the top.
