          If a recipe calls for 1 cup whole milk and you do not have any on hand, an emergency substitution would be 1/2 cup evaporated milk plus 1/2 cup water.

          • 1 cup graham cracker crumbs
          • 3 tablespoons sugar
          • 1/2 teaspoon cinnamon
          • 1/4 cup margarine, melted

          • 2 (8-oz.) packages cream cheese, softened
          • 1/2 cup sugar
          • 2 eggs
          • 1/2 teaspoon vanilla

          • 4 cups apples, peeled and sliced thin
          • 1/3 cup sugar
          • 1/2 teaspoon cinnamon
          • 1/4 cup chopped pecans

          1. Combine crumbs, sugar, cinnamon and margarine; press into bottom of 9‑inch springform pan.
          2. Bake at 350° for 10 minutes.

          1. Combine cream cheese and sugar, mixing at medium speed with an electric mixer until well blended.
          2. Add eggs, one at a time, mixing well after each addition.
          3. Blend in vanilla; pour over crust.

          1. Toss apples with combined sugar and cinnamon.
          2. Spoon apple mixture over cream cheese layer; sprinkle with chopped pecans.
          3. Bake at 350° for 1 hour and 10 minutes.
          4. Loosen cake from rim of pan; cool before removing rim of pan. Chill.
