          When a recipe calls for 1 teaspoon baking powder, you may substitute 1/4 teaspoon baking soda plus 5/8 teaspoon cream of tartar, although it may alter the taste slightly.

          Stir a cup of this salsa into sour cream or unflavored yogurt and use it as a sauce with pork or chicken.

          Yield: 2 1/2 cups

          • 1 1/2 cups chopped fresh apricots
          • 3/4 cup chopped green bell pepper
          • 1 3/4 cups seeded chopped cucumber
          • 1/4 cup sliced green onion
          • 1 jalapeno chile, seeded and finely chopped
          • 2 tablespoons honey
          • 2 tablespoons lime juice
          • 1 tablespoon finely chopped fresh cilantro

          1. Combine all ingredients.
          2. Cover and chill.
