For evenly rounded tops on nut breads and muffins, grease baking pans or muffin cups on the bottom and only 1/2 inch up the sides. Do this and your batter will cling to the sides of the pan instead of sliding back down.

- 1 1/2 cups celery, chopped
- 2 pared, cored, and cubed apples
- 1 hard-boil egg
- 1 tablespoon cooking oil

- 1 tablespoon cream
- 2 teaspoons vinegar
- 1/4 teaspoon salt and pepper each
- 1 teaspoon sugar

- Cook the celery until tender. Drain and chill well.
- Mash the egg yolk with the cooking oil and cream; then add the vinegar, salt, pepper, and sugar and mix very well.
- Combine the apples with the cooked chilled celery and pour over the egg-yolk mixture.
- Place on a lettuce leaf and top with the finely chopped egg white.
